Crock Pot Greek Yogurt

Yogurt!! Ahhh creamy, velvety deliciousness! We go through a lot of yogurt in our house. My kids eat it every day for snack and almost daily for lunch. I make a lot of recipes using greek yogurt, that are sooo delicious. It is expensive to buy yogurt constantly, but I think I found a solution – CROCK POT GREEK YOGURT!!! I was so excited when I found this recipe over at A year of slowcooking.

Here are some reasons why I love Greek yogurt!

  • It fills you up.
  • It has luxurious texture.
  • It’s thicker and creamier than regular yogurt.
  • My kids love it.
  • It is full of calcium and protein.
  • It’s good for the digestive system, because it has tons of probiotics.

9 Reasons why making it yourself is a great idea.

  • You can throw it in the crock pot at night and it is ready in the morning for breakfast or snacks.
  • It’s A LOT cheaper – a Greek yogurt from the grocery store is 1.59 each, this method is only .30 per yogurt.
  • You help our planet, by using glass or plastic reusable containers.
  • You can flavor it to your liking with fresh fruit, Agave Syrup, cinnamon, granola, sugar free Jam, pure maple syrup etc.
  • Because you’re growing your own cultures, you know they are active and what the length of the shelf-life is about 7 days from when you make it.
  • It will have a lot less Sugar:  Most yogurts have 5 teaspoons of sugar in a 6 oz. yogurt!  Flavoring yogurt yourself allows you to control the amount of sugar you add.
  • No Strange ingredients: Pectin, Artificial coloring/flavors, modified corn starch, high fructose corn syrup, Aspartame, gelatin, citric acid, and many other additives can be found on yogurt labels in your local grocery store.
  • You can choose a local organic milk source that you trust.

Crockpot Chicken Tomatillo Bake – 8 points +

As you all know Mexican is my favorite type of food. It is also pretty easy to prepare and my husband and kids gobble it up every time I make it. Today I had to drive the kids to school, do laundry, grocery shop and I have to work at the college this evening, so out came the crock pot. This is a super easy recipe and you can assemble it in 5 minutes, set your slow cooker and go. You will come home to a house smelling heavenly and all you have to do is heat up some refried beans or rice as a side. One of my other favorites Slow Cooker Tortilla Soup would be a great thing to have the next day with any left over shredded chicken. Enjoy!

Crockpot Chicken Tomatillo Bake

Serves 4

Ingredients

  • 1 cup salsa verde or 1 (7 ounce) jar of tomatillo sauce
  • 1 cup fat free sour cream or plain Greek Yogurt
  • 1 garlic clove, minced
  • 1/3 cup chopped fresh cilantro
  • 8 fat-free corn tortillas
  • 2 cups cooked, shredded chicken
  • 1 cup reduced fat grated cheddar cheese

Directions:

  1. Mix salsa, cilantro, Greek Yogurt and garlic in a bowl.
  2. Spray crockpot with non-stick cooking spray. Place 2 or 3 tortillas in the bottom of the crock pot. (overlapping as much as possible, you can cut them to fit if necessary)
  3. Spoon 1/4 of the salsa mixture over the tortillas. Spread 1/2 chicken over the mixture and cover evenly with 1/4 cup of cheese.
  4. Top with 2 or 3 more tortillas and spoon 1/4 of salsa mixture, remainder of chicken and 1/4 cup of cheese.
  5. Place last 2 or 3 tortillas over the second layer and top with the rest of the salsa mixture and the remainder of the cheese.
  6. Cover and cook on low for 4 hours.

Serving is 1/4 of the casserole

366 calories, 4 grams fat, 46 grams carbs, 4 grams fiber, 30 grams protein

Southwestern Egg Cups – 2 points +

Hi everyone and happy Friday morning! I am enjoying some beautiful CT weather here and with one kid in school, one napping and one playing in the back yard “nicely” life is good!!! So I have been eyeing these taco egg muffins over at Danica’s Daily  blog and I thought maybe I would mix the recipe up a bit and add some different ingredients. I love southwestern egg rolls, like the ones you can find at Cheesecake Factory and California Pizza Kitchen. They are usually wanton wrappers filled with chicken, beans, avocado etc. So I decided to create my own egg cup version!! They are awesome and only 2 points + each! I used my favorite low carb Trader Joe’s tortillas!

Individual Lemon Curd, Strawberry Cheesecakes (4 points +)

I made a fantastic Peanut Butter cup cheesecake the other night and it was a big hit, but sometimes you just want your own little cheesecake. I made these for dessert today for a friend who was coming over for lunch. They are the perfect size and the lemon curd and strawberries are an amazing combination. These were very easy to make and I like that you don’t have to figure out the serving size, because it is already done for you!! These are perfect for a summer BBQ or a light dessert!!! Enjoy!

 


 

Individual Lemon Curd and Strawberry Cheesecakes

Serves 9

Ingredients

  • 9 vanilla wafers
  • 1 package (8 ounces each) reduced-fat cream cheese
  • 1/3 cup fat free Honey Greek Yogurt
  • 1/3 cup sugar
  • 1 egg, lightly beaten
  • 1 teaspoons vanilla extract
  • 4 teaspoons lemon curd
  • 9 small strawberries

Directions

  1. Heat oven to 350° F. Place 9 muffin liners in a muffin tin. Place one vanilla wafer flat side down in the bottom of each liner.
  2. In a large bowl, beat the cream cheese, Greek yogurt and sugar until smooth. Add egg and beat on low speed just until combined. Stir in vanilla. Pour filling evenly into the 9 muffin liners.
  3. Bake for 20 -25 minutes. Allow to cool.
  4. Refrigerate at least 1 hour or overnight.
  5. Before serving garnish each one with a ½ teaspoon of lemon curd and one strawberry.
  6. Optional –  Blend 10 strawberries, a tablespoon of water and a little bit of sugar in food processor to make a sauce for decoration on the plate

Nutrition Facts: 159 calories, 10.8 g fat, 13.1 g carbohydrate, 0 g fiber, 3.2 g protein.

Easy and delicious snacks!!!

I was at a friend’s house today for a play date and a work out session with the Jillian Michael’s DVD and we started talking about snacks. She said she finds it difficult to snack during the day and then is ravenous by dinner time. Snacking is important! It keeps your metabolism up, it makes us less likely to stuff ourselves at meals and I love to eat, so the more food the better. I think that many of us need a quick snack that satisfies us! So eat something that  you are craving!  ! You need at least 2 a day!! So pick some you like! Here are some of my favorite snack ideas for all us busy woman out there….

This is delicious. I saw this posted on one of my favorite blogs Danicasdaily as her “dessert” after lunch everyday. I bought the ingredients and love it!!!

“Lemon Meringue Pie” Parfait (4 points +)

  • 1/2 cup of plain or vanilla flavored greek yogurt
  • 2 vanilla wafers crumbled
  • 1 teaspoon of jarred lemon curd

You can layer it in a pretty glass or just put it in a bowl! It is amazing and totally tastes like pie!

We were invited over to a friend’s house for dinner this week and she said I could bring dessert! I suggested cheesecake, but she said her husband wasn’t a big fan. So I said how about if I put chocolate and peanut butter in it? She said “He will love it!” So I decided to create a decedent, reduced fat version of my favorite cheesecake, Adam’s Peanut Butter Cup Fudge Ripple at the Cheesecake Factory.  One slice of their cheese cake has: Calories 930 , Total Fat 59g,  Total Carbohydrate 93g , Dietary Fiber 4g , Protein 17g on piece is 27 POINTS +!!!! Scary!!!! My version is just as delicious and will satisfy your every chocolate, peanut buttery desire. I used fat free Greek yogurt instead of sour cream and it made the filling very velvety and creamy!!! Enjoy!!!

Frozen Fruit and Yogurt Popsicles (1 point + each)

As the weather FINALLY is warming up here in Connecticut. I decided to pull out my popsicle mold from the pantry and to break it in for the season. I have been making my delicious and filling tropical protein smoothies every morning and for my mid day snack, so as I pulled out my ingredients this afternoon I decided to make pops. Since my kids will be eating them to, I omitted the protein powder and pulled out one of my chobani Greek Yogurts instead. These are so yummy and delicious and you can eat 4 of them for only 3 points +! Enjoy!!

Tropical Protein Smoothie – 4 points +

Mornings are crazy at my house! I have to get my daughter ready for kindergarten, my son ready for preschool and my baby dressed for the day. After making breakfasts, packing lunches and waiting at the bus stop, I look at the clock and realize I have not eaten yet. I know my instinct is to grab a granola bar or a piece of toast, but that won’t keep me full. So I have started making smoothies for breakfast and quick snacks. They are super delicious and very filling. After reading about protein whey powders, I ventured to GNC and bought what they said was the best protein powder for a woman trying to lose weight.

 

 

 

Serving Size 2 scoops – Calories 200, fat 3, Carbohydrates 17, Fiber 8, Protein 25

I have noticed that since  I started having one of these for breakfast and as a snack each day, that my weight loss has really taken off. I think it has to do with all the extra protein and that I am fuller longer and don’t feel the need to snack constantly. I bought big bags of frozen fruit and those really help make it taste amazing, cold and fresh!

Amazing Maple Cinnamon Baked Donuts! (2 points +)

Most of us try and avoid donuts while we are trying to lose weight, but I have found a loop hole! These donuts are just as delicious, but they are BAKED! I saw a few recipes online and was intrigued, so I bought a mini donut pan on amazon. I figured I would rather eat multiple little donuts, than just one big one, but I love them so much that I may spring for the other pan too!!! I found a recipe at cooking with my kid and altered it with a little more maple syrup and I added some brown sugar. These were AMAZING! They tasted just like a donut and dipping them in butter and coating them in sugar, made them taste very naughty! They are best the first day you make them, but you and freeze them and pop them in the microwave. I plan on making many more mini donut creations, so get a pan on one of the links above and start baking!! Enjoy!

Crispy “Fried” Chicken (7 points +)

I have never been a big fan of fried chicken. It is too greasy and I always feel gross after I eat it. When I was searching for recipes to fit into my “Greek Yogurt” week, I saw this recipe on food network. I liked the idea that it was baked, not fried, and that they reviews were so positive. I tweaked the recipe a little bit and baked it on a cooling rack on top of a cookie sheet, so it was crispy on the bottom as well. I made some quick mashed potatoes (I even added some Greek yogurt to these) and sliced up some tomatoes as a side. It was good, crispy and crunchy and the inside was juicy! Very yummy!
