“Thai” Spicy Peanut Noodles with Seasonal Vegetables

2 Jun

So I have been reading this amazing new book called Wildly Affordable Organic by Linda Watson and she gives you wonderful ideas of how to shop on a budget and still feed your family organic.

She has shopping lists, menu planning and recipes in her book in such a simple format. Since, I am trying to integrate as much organic, local food into my diet; I am integrating her suggestions in baby steps into my daily routine. I have planted an organic vegetable garden, so I know all my produce is fresh and pesticides free and we are visiting a local farmers market this weekend to buy more “local” ingredients. So far I have made her No Knead “Wisk” bread, (it is so simple and really easy) her Hot milk cake (we used this for strawberry shortcake over the weekend) and tonight I am trying her Noodles in Spicy Peanut Sauce with Seasonal Vegetables. I like this recipe, because she tells you how to use different vegetables depending on the season. I used the things in my fridge. I had some cauliflower, cucumbers, carrots and a yellow pepper. I also topped it with my basil from my new herb garden on my deck! I love Thai Food, so this was really yummy. The sauce gives it a smooth, peanut buttery kick, while the fresh veggies add those important nutrients and a great crunch factor.  I changed a few ingredients along the way, but stayed pretty true to her recipe. Enjoy!

Shannon’s “Healthier” Chocolate Peanut Butter Cheesecake (9 points +)

5 May

We were invited over to a friend’s house for dinner this week and she said I could bring dessert! I suggested cheesecake, but she said her husband wasn’t a big fan. So I said how about if I put chocolate and peanut butter in it? She said “He will love it!” So I decided to create a decedent, reduced fat version of my favorite cheesecake, Adam’s Peanut Butter Cup Fudge Ripple at the Cheesecake Factory.  One slice of their cheese cake has: Calories 930 , Total Fat 59g,  Total Carbohydrate 93g , Dietary Fiber 4g , Protein 17g on piece is 27 POINTS +!!!! Scary!!!! My version is just as delicious and will satisfy your every chocolate, peanut buttery desire. I used fat free Greek yogurt instead of sour cream and it made the filling very velvety and creamy!!! Enjoy!!!

Easy Peanut Butter Chocolate Truffles!

10 Dec

I love chocolate. Chocolate ice cream, chocolate fudge, chocolate fondue, you name it,  I love it! Whenever I am at the mall, I treat myself to one truffle at Godiva.  About 5 years ago I went to a party and the hostess made the most amazing truffles. When she told me the secret and  I was shocked! Melt a bag of chocolate chips and mix it with frosting and you have truffles. She flavored them with extracts, such as orange, rum, hazelnut and banana. Everyone raved about them. Here is one of my many versions…..enjoy!
