Someone sent me an awesome idea to change up the lemon muffins the other day! She tried them at home and added key lime juice and key lime yogurt instead! What an awesome idea! I am heading to key west for a week tomorrow….so I know I will be able to pick up some key lime juice down there! You can also use fresh limes from the grocery store! Georjie also included a picture of her muffins!! MMMMMmmmmm! Still only 4 points + a muffin! Thanks for the great idea!!!

I saw this amazing recipe for Meyer Chia Muffins on Danica’sDaily and thought I have to try it out! I live in the northeast, so I am not able to find Meyer lemons and I did not have time to head to whole foods for Chia seeds, so I ran to the local market and picked up the remainder of the ingredients. These muffins are very delicate and tender and reminded me of a cupcake. They were really delicious and would be yummy with a cream cheese frosting for a special treat! I sprinkled some cinnamon and sugar on the top before baking.

Whole Wheat Banana, Carrot , Zucchini Muffins

The age old question is…..How do you get your kids to eat their veggies? You can chop them up and hide them in spaghetti sauce, throw some in a meatloaf or you can always make Muffins!! These muffins have bananas, carrots and zucchini in them and a very small amount of oil and sugar. They are super moist and very delicious!! My kids LOVE them!! They literally ate 3 each yesterday, one plain, one with cream cheese and one with jelly!(Sugar free) I love muffins too! But the healthy ones taste way to healthy for me and they are usually really dry. These are soft, have a great texture and are very flavorful! These tasty muffins would also be delicious with about 1/2 cup of chopped walnuts or pecans, either in addition to the carrots or to replace them. (Make sure and change your points)
