Taco Cupcakes

Hi everyone and happy Friday! I am enjoying some beautiful CT weather and counting down the days until school starts. I baked my yogurt lemon muffins for breakfast and added some fresh blueberries. They were awesome and I doubled the recipe and froze ½ of the muffins for school snacks. So I have been eyeing these taco cupcakes over at Emily Bites  blog and I thought maybe I would mix the recipe up a bit and add some different ingredients. I love the southwestern egg rolls  like the ones you can find at Cheesecake Factory and California Pizza Kitchen. They are usually wanton wrappers filled with chicken, beans, avocado etc.!! I did  have some wanton wrappers, but next time  I will use  my favorite low carb Trader Joe’s tortillas!

My low fat Layered Mexican Dip!

I love dip. Dip with chips, dip with crackers and dip with veggies. One of my favorite is a Mexican layer dip. I created this one for a family picnic a few years ago and it was a huge hit!!! Everyone will devour it and have no idea it is good for them! Enjoy!

Chicken “Margherita” Quesadillas – 7 pts +

Quesadillas are an easy and delicious, quick meal. I like to fill my tortillas with a variety of fillings. Some of the savory ones I make are made with the same ingredients as my favorite foods; Rubens with sauerkraut and corned beef, grilled veggies and cheese,and pepperoni, mozzarella and pizza sauce. You can also make them sweet with nutella or peanut butter with bananas and strawberries or apples and cinnamon. One of my favorite pizzas is the Margherita. It has fresh buffalo mozzarella, basil and tomato. The colors green, white and red are symbolic of the Italian flag.

Here is my spin on the traditional quesadilla; Instead of using fresh mozzerella, I used chevre (soft goat cheese). I also always have a big bag of precooked chicken strips from Tyson and I threw some of those in as well. The cheese melted beautifully and the tortilla was crisp. It was a perfect lunch! Enjoy!!

So I have been eyeing these taco egg muffins over at Danica’s Daily  blog and I thought maybe I would mix the recipe up a bit and add some different ingredients. I love southwestern egg rolls, like the ones you can find at Cheesecake Factory and California Pizza Kitchen. They are usually wanton wrappers filled with chicken, beans, avocado etc. So I decided to create my own egg cup version!! They are awesome and only 2 points + each! I used my favorite low carb Trader Joe’s tortillas!

Easy Crock Pot Pork Carnitas! (5 points +)

Cinco de Mayo is just around the corner! Mexican is one of my favorite types of food, so I decided to take out the crock pot today and create one of my family’s favorite recipes. These are so simple, because all you do is put a boneless pork loin in your crock pot and then shred it and put some sauce on it. It is really delicious, low fat and easy!!! I like to wrap mine in low fat wraps: These are two  great  options -

Chicken Tamale Casserole (7 points +)

As you guys know, I love Mexican Food! It is my favorite type of food. I have a favorite blog that I visit every day called Danicasdaily. She always has great ideas for meals and snacks and yesterday she posted a tamale casserole from cooking light. I made a vegetarian tamale pie a couple of months ago using polenta and soy chorizo, so I knew my family would enjoy it. I checked out the recipe and decided it looked delicious and I had to try it out. I altered some ingredients to fit what I had in the pantry! Here is my Green salsa variation! Enjoy!!

Light Chicken Enchiladas (8 points +)

I love Mexican food. Whenever my husband and I go out to dinner (which is not much with 3 kids) we go to our favorite Mexican restaurant Puerto Vallarta. I get a Pollo Asado burrito with grilled veggies and tomatillo green salsa and he gets Arroz con Pollo a chicken and rice dish. Overall it tends to be a pretty fattening meal, but it is delicious. I decided to create a light version of chicken enchiladas using low carb tortillas and of course Greek Yogurt. They turned out spicy, creamy and delicious. You can also top these with a green sauce if that is more your thing. My family loved them and we served them with fat free refried beans! Enjoy!
