Low Fat Banana Bread Cookies! (2 pts +)

Ahhhhh Cookies!!!!  I live in a cold, snowy place during the winter months, so finding things to do with my kids in the house can get pretty boring. Therefore we bake.  I love making desserts, mainly cookies and my quest for healthier cookies that taste good is never ending.  My kids love to help out and it is a fun way to do something with them that produces a fabulous result. I found a recipe similar to this on the internet, but it had coconut in it. I decided to switch it out and instead integrate some dried berries. I usually have a couple different dried fruits that I use to add into quick breads and to toss on hot cereal, so I decided on some  tart dried cherries. The cookies turned out great and are only 2 points + each. They are chewy, have a faint banana flavor and not dry at all. My kids gobbled them up. Try them out and let me know what you think!


Super Cheesy Low Fat Cauliflower Mac and Cheese

My kids favorite food is Mac and Cheese. They love the boxed version as well as homemade. I bought a big head of cauliflower when I was at the store the other day and was not sure exactly what I was going to do with it. My mom always did a decadent cauliflower bake where she boiled the whole head of cauliflower, then covered it in a mix of mayo and mustard and then shredded cheddar, she would bake it until melted and it was delicious. It was not the healthiest way to dress up a veggie, so I decided to scour the internet and see what else I could find. I found a lot of cauliflower mac and cheese recipes and thought it sounded interesting, however most of them were super high in fat! Heavy cream, cream cheese and whole milk cheese! I knew I could make it a little healthier and still make my family happy! My kids and husband gobbled it up and it reminded me of my mom’s recipe, gooey, cheesy and oh so yummy! (Since I am on ww, I put the points at the bottom of the recipe)




Individual Pepperoni Veggie Pizza! (7 points plus)

I like pizza and although you can have pizza on ww, one slice is usually not very satisfying. I like making pita pizzas for myself and loading on tons of veggies. You can use anything that is in your fridge – mushrooms, peppers, tomatoes, zucchini, broccoli etc. and because these are all zero points you do not need to count them. I like to add turkey pepperoni or sausage to liven to up a little. I like the Joseph Middle Eastern pitas or you can use their lavash bread for a giant pizza. My kids like these with pepperoni and cheese. Add a big salad and you have a huge dinner or lunch for only 7 pts!!
