Turkey Vegetable Meatloaf! (5 points +)

Meatloaf was a staple in my house growing up. My mom would always shape it into a circle and then fill it with mashed potatoes before she served it. It was a fun and delicious meal that we looked forward to. As many of you know I am a veggie hider, I like to put them in unexpected places my kids can not detect. This is another one of my favorite recipes! It is delcious and moist and it makes fantastic left overs for a sandwich! Only 5 points per serving! Enjoy!

Garlicky Spinach Cheese Squares (4 points +)

I have a lot of dip recipes, but I am always on the search for a new appetizer that is a little different and still delicious.  Frozen spinach is very easy to store and the rest of the ingredients are always in the pantry, so it is an easy last minute snack. It has lots of iron and yummy cheese! Everyone loves them!  They are 4 points + for a small square or you can cut them into large squares and eat it as a meal with a large salad! Enjoy!!


Fresh and Easy Mexican Rice

We are having burritos tonight and I love mexican rice. Sometimes we buy the rice in a box, but it is never as good as the rice you can get in a mexican restaurant. I figured why not try to make my own with some veggies and see what the family thinks. Simple and did not take anymore time than a box mix. It was delicious!  


Beer Beef Stroganoff

We had amazing steak a few nights ago! I buy it at BJs in the big sections and then my husband cuts them nice and thick, so they are better then anything you can get when you go out. The only problem is we always have lots of leftovers, so the best thing to do is to make beef stroganoff! I love this dish and you can whip it up in 20 minutes. My husband added some extra touches to this recipe! We all (kids included) licked every drop of sauce off our plates when we were done. 


Home Made Croutons!

One of my favorite things at a restaurant is a good salad bar. Not with all those mayonnaise based salads and bacon bits, but one with unusual, fresh toppings, a large array of salad dressings and homemade bread. I bought a big loaf of fresh sourdough bread (my favorite) from price chopper and there was a big hunk left a few days later. I decided why not make some croutons! They would go perfectly with the salad and steak dinner we were planning. It took no time and we even had some left over that I plan to put on a salad for lunch today! I love easy, quick things that use up things I already have in the house. Enjoy!
