Turkey Vegetable Meatloaf! (5 points +)

Meatloaf was a staple in my house growing up. My mom would always shape it into a circle and then fill it with mashed potatoes before she served it. It was a fun and delicious meal that we looked forward to. As many of you know I am a veggie hider, I like to put them in unexpected places my kids can not detect. This is another one of my favorite recipes! It is delcious and moist and it makes fantastic left overs for a sandwich! Only 5 points per serving! Enjoy!

Homemade Chicken Pot Pie!

Homemade Chicken Pot Pie

1 – 9 inch pie
Serves 6
Prep time 20 min Cook Time 30 min


  • 2 cups cooked shredded or cubed chicken
  • 1 can mixed vegetables
  • 1/3 cup butter
  • 1/3 cup chopped onion
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon celery seed
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • 1 cup cheese
  • 2 (9 inch) unbaked pie crusts


  1. Preheat oven to 425 degrees F (220 degrees C.)
  2. In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth, cheese and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.
  3. Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, crimp edges with fingers or fork, and cut away excess dough. Make several small slits in the top to allow steam to escape.

4. Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.

What to do with left over mashed potatoes!!! Make delicious pasta!

You Will Need
2 cups mashed potatoes
1 cup + 2 tablespoons all-purpose flour (more for dusting)
2 tablespoons parmesan cheese
1 egg beaten
2 tablespoons softened butter
salt and pepper to taste
large pot boiling  water
1 jar (26 ounces) spaghetti sauce, warmed
1/4 cup grated Parmesan cheese

What to Do
1. In a large bowl, combine the mashed potatoes,  parmesan cheese, flour, butter, egg, pepper and salt. Mix with  your hands or a spoon.
