Hi everyone and happy Friday! I am enjoying some beautiful CT weather and counting down the days until school starts. I baked my yogurt lemon muffins for breakfast and added some fresh blueberries. They were awesome and I doubled the recipe and froze ½ of the muffins for school snacks. So I have been eyeing these taco cupcakes over at Emily Bites  blog and I thought maybe I would mix the recipe up a bit and add some different ingredients. I love the southwestern egg rolls  like the ones you can find at Cheesecake Factory and California Pizza Kitchen. They are usually wanton wrappers filled with chicken, beans, avocado etc.!! I did  have some wanton wrappers, but next time  I will use  my favorite low carb Trader Joe’s tortillas!

Meatloaf was a staple in my house growing up. My mom would always shape it into a circle and then fill it with mashed potatoes before she served it. It was a fun and delicious meal that we looked forward to. As many of you know I am a veggie hider, I like to put them in unexpected places my kids can not detect. This is another one of my favorite recipes! It is delcious and moist and it makes fantastic left overs for a sandwich! Only 5 points per serving! Enjoy!

We had amazing steak a few nights ago! I buy it at BJs in the big sections and then my husband cuts them nice and thick, so they are better then anything you can get when you go out. The only problem is we always have lots of leftovers, so the best thing to do is to make beef stroganoff! I love this dish and you can whip it up in 20 minutes. My husband added some extra touches to this recipe! We all (kids included) licked every drop of sauce off our plates when we were done.
