Hi everyone and happy Friday! I am enjoying some beautiful CT weather and counting down the days until school starts. I baked my yogurt lemon muffins for breakfast and added some fresh blueberries. They were awesome and I doubled the recipe and froze ½ of the muffins for school snacks. So I have been eyeing these taco cupcakes over at Emily Bites blog and I thought maybe I would mix the recipe up a bit and add some different ingredients. I love the southwestern egg rolls like the ones you can find at Cheesecake Factory and California Pizza Kitchen. They are usually wanton wrappers filled with chicken, beans, avocado etc.!! I did have some wanton wrappers, but next time I will use my favorite low carb Trader Joe’s tortillas!
