Pina Colada Banana Split

Do you like Pina Coladas? Or being caught in the rain? I was craving a banana split last night and decided to create a very low point option. I knew driving to Dairy Queen would not be a good option and I had very few points left yesterday. I took some of my favorite things and created this wonderful dessert!  It totally satisfied my sweet tooth and was very filling. You can also make other fruit “ice cream” with frozen strawberries, yogurt, blueberries etc. Delicious! (Sorry it looks a little melty, it was hot outside)


Pina Colada Banana Split

Serves 1


  • 2 bananas cut into slices and frozen on a cookie sheet
  • 1 banana cut length wise
  • 1 tsp coconut extract
  • 2 tablespoons pineapple cut into little chunks
  • 1 tablespoon chocolate syrup
  • 4 cashews crushed


  1. Take frozen banana slices out of the freezer and put in your cuisinart. Add coconut extract and pulse until it forms an “ice cream” like texture. Remove “ice cream” from the container and stir in the pineapple.
  2. Place banana that has been cut length wise in a dish and put two scoops of  “ice cream” on top.
  3. Top with chocolate syrup and cashews!

3 points + per banana split!

Whole Wheat Banana, Carrot , Zucchini Muffins

The age old question is…..How do you get your kids to eat their veggies? You can chop them up and hide them in spaghetti sauce, throw some in a meatloaf or you can always make Muffins!! These muffins have bananas, carrots and zucchini in them and a very small amount of oil and sugar. They are super moist and very delicious!! My kids LOVE them!! They literally ate 3 each yesterday, one plain, one with cream cheese and one with jelly!(Sugar free) I love muffins too! But the healthy ones taste way to healthy for me and they are usually really dry. These are soft, have a great texture and are very flavorful! These tasty muffins would also be delicious with about 1/2 cup of chopped walnuts or pecans, either in addition to the carrots or to replace them. (Make sure and change your points)


Bread Machine Banana Chocolate Chip Pecan Bread

I was pretty late with the whole bread machine craze. When my friends were all getting them at their wedding showers ten years ago, that was the last kitchen item I ever thought I would use. Last year my Mom made some cottage cheese dill bread in her bread machine. (I didn’t even know she had one) It was soft, warm and absolutely delicious. I smothered it in butter and I was hooked. Who thought fresh bread could be so easy to make! So I got a bread machine. Now to say I was a little obsessed with it when I first got it would be an understatement. I vowed never to buy that evil store bought bread again! I made every type of bread you can imagine. I started with the basic recipes and then started to expand my horizons. Did you know that you can make bread that looks like a bakery by simply using the dough cycle, shaping it and then putting it in a warm, empty dishwasher to rise? (On a cookie sheet, covered with a towel of course) It rises in no time and then you can have Ciabatta ( an amazing Italian bread), Challah ( an eggy, sweet bread that you can braid), Hawaiian Sweet bread (divine!) and other fancy looking breads that taste superior to anything you can find in the bakery section of the grocery store. The best part is you don’t get any dirty dishes and you can throw everything in on your way out the door. I am a big fan of doing a crock pot dinner with my bread machine bread. I put my bread machine on a timer and both are ready at the same time. Easy, no real clean up and fantastic. I have been on a bread making hiatus for a while, but decided to start up again today and some brown bananas called my name. This makes fabulous French toast.  I am already imagining it with oozing butter and warm maple syrup!!!! Yummy!
