Barefoot Wine & Bubbly Review and Artichoke Cups

I love hosting and going to home parties. I actually was a consultant for “The Body Shop at Home” (yes the cosmetics store in the mall) for 7 years.  I did facial, makeup and pedicure parties. They were so fun and I love meeting new people and allowing woman to pamper themselves. I love getting all my friends together to hang out, relax, eat and drink!. I had 10 friends over on Friday night, my kids slept at my mother in laws and I was ready to chill out!  My friend Raeshelle is selling these adorable bags and storage bins for Thirty One Gifts!! I earned 200.00 in free products!!! Wooo Hooo!!! I will be giving away one of her adorable bags this fall, but check out her website! The bags are awesome quality and I love the fabric choices and how you can personalize them!

The Best Bag ever!!! The organizing utility tote has 7 outside pockets!! I got one to keep in my mini van to hold all my “Stuff” in the well between the front two seats and it was only 25.00!!!!

I was so excited when I was able to try some delicious wine and champagne from Barefoot Wine and Bubbly!! They sent me their Sweet Red and their Brut Cuv’ee Champagne. I also picked up a bottle of their Moscato for the home party that I hosted on Friday night!

 

The first wine we tried was the Sweet Red.

I made a sangria with it. I added  tons of fruit. Chopped apples, mango, pineapple, green grapes, and orange slices. All you have to do is pour the bottle of wine in a large pitcher, add one can of diet sprite or ginger ale and all your fruit. Let it marinate for 1 hour. It was amazing and you can eat the fruit with a fork.

 

I also bought a big bottle of the Moscato at my local liquor store. My friends loved it and they drained the bottle in no time! It was light, fresh and delicious!!

We have not tried the champagne yet, but my husband and I plan to pop it open as soon as the air gets a chill in it, so we can enjoy it by the fire.

Now the best part at home parties besides the drinking and shopping is the food! I made tons of naughty favorites, but also made my delicious Roasted Eggplant Dip and a ww friendly artichoke cups. My friend Julie shared this recipe with me and I know you will love them. They are like eating artichoke dip in a wanton wrapper. Easy, low in points and everyone wanted the recipe!

Tomato and Goat Cheese pasta

Do you like Goat Cheese?? I love it! Feta is one of my favorites, but I also love soft creamy goat cheese spread on crusty bread or in pasta. I have recently discovered how healthy goat milk is for us. It is a closer make up to human milk than cow’s milk so our body can digest it easier. It is also lower in fats and is great for people who are lactose intolerant. I have found some amazing goat’s milk products that can be found at whole foods : Redwood Hill Farm Goat’s milk yogurt (with wonderful flavors like cranberry orange and apricot and mango) and La Loos Goats milk ice cream (with divine flavors like Deep Chocolate and Rumplemint) * I will be doing giveaways for both of these companies soon!**

Anyways I picked up some chevre (soft goat’s cheese) at the grocery store yesterday and decided to make one of my favorite pasta dishes. It is delicious!!! Enjoy!!

Lemon Buttermilk Baked Mini Donuts (2 points +)

After my first BAKED donut experience last week when I made my delicious maple cinnamon donuts, I knew I needed to try out my mini donut pan again.  I searched around my fridge for ingredients, I decided on lemon and buttermilk. I like to use buttermilk in my baking because it adds a wonderful tanginess to the food.  I still think that eating 3 mini donuts instead of one big one using this regular size donut pan makes you feel like you are eating more.  I tossed them in some powdered sugar and not only did they look adorable, but they were incredibly tasty. This recipe makes a lot (36) so adjust it as needed! Donut heaven here you come!

Light Chicken Enchiladas (8 points +)

I love Mexican food. Whenever my husband and I go out to dinner (which is not much with 3 kids) we go to our favorite Mexican restaurant Puerto Vallarta. I get a Pollo Asado burrito with grilled veggies and tomatillo green salsa and he gets Arroz con Pollo a chicken and rice dish. Overall it tends to be a pretty fattening meal, but it is delicious. I decided to create a light version of chicken enchiladas using low carb tortillas and of course Greek Yogurt. They turned out spicy, creamy and delicious. You can also top these with a green sauce if that is more your thing. My family loved them and we served them with fat free refried beans! Enjoy!

Dreamy Nutella Cookies (2 point +)

I have done it! I have created the best cookie ever!!! The other day I was browsing the internet looking for baked donut recipes (yes, I am making those soon!) and I came across a Nutella Thumbprint Cookie recipe on Emilybites. It sounded wonderful and weight watcher friendly, but since I am trying to incorporate Greek Yogurt into my recipes this week, I figured why not substitute ½ the butter with yogurt. The result is AMAZING!!!! I am a huge nutella fan. If you have never tried it I would HIGHLY recommend it. It is a creamy, chocolatey, hazelnutty wonderfulness……. These cookie are to die for and healthy to boot! Try them and you will swear you are not eating anything remotely healthy!

Yogurt Chocolate Chip Cookies ( 2 points +)

This week I am dedicating all of my recipes to Greek Yogurt. Not only do I love to eat Greek Yogurt, but I use it to cook with as well. It is a great substitute for sour cream and you can also use it as a substitute for fat in recipes. Many of the recipes I have featured on my site have Greek yogurt in them, tzatziki sauce, Key Lime Muffins, Lemon Yogurt Muffins and Banana, Carrot, Zucchini Muffins . This week I decided I would not only try baked goods, but some main courses as well.  I was so excited to try out some of the new amazing yogurts that Chobani sent me to try and as you know I love cookies! These cookies are so soft and flavorful, you will never miss the full fat version! The yogurt allows them to keep their shape, so they do not flatten out when you bake them.   I also love the fact that they are egg free, which means you can eat the dough raw and not worry about it !!! :)

Zumba and White Chocolate Almond Cookies!

Today was a yucky day! The weather is dreary, my husband is cutting wood at a friends (So I am alone with 3 kids Yippeee!) and I am sore from the 2 hour Zumba fundraiser I went to last night. ( So fun!!!) I went to the fundraiser with 2 of my friends and got to try out my new Zumba shoes!! They really helped with all the twisting and turning on the gym floor. I am a group fitness kinda gal and working out with 50 other women of all shapes and sizes, made me feel great. My post baby body didn’t look so bad. So onto entertaining the kiddies…..our old fall back… cookies. I am telling you, this is why people in the north east gain so much weight in the winter, we just eat and then cover up our fat with big sweaters and puffy coats. Hence weight watchers!!!  I love classic chocolate chip cookies, but wanted to try something different. I bought some almond extract, so I can make the low fat banana muffins that I read about on Green Lite Bites website and I wanted to figure out another recipe to use it in as well. I decided to try out a new combo, white chocolate and almond. They turned out really well and the small amount of butter and oats used to substitute some of the flour, help keep them low points! Yummmmmm…..

TLC bars from Kashi!

These are the best granola bars! I love them and so do the kids. I always feel like most granola bars are sad. You get 5 chocolate chips and some oatmeal in 3 bites and they are not worth the calories. But these are awesome! Big chunks of fruit and whole nuts. You actually feel like you are eating something that will actually fill you up! My favs are the trail mix bars! Check them out next time you are at the store!
