Barefoot Wine & Bubbly Review and Artichoke Cups

I love hosting and going to home parties. I actually was a consultant for “The Body Shop at Home” (yes the cosmetics store in the mall) for 7 years.  I did facial, makeup and pedicure parties. They were so fun and I love meeting new people and allowing woman to pamper themselves. I love getting all my friends together to hang out, relax, eat and drink!. I had 10 friends over on Friday night, my kids slept at my mother in laws and I was ready to chill out!  My friend Raeshelle is selling these adorable bags and storage bins for Thirty One Gifts!! I earned 200.00 in free products!!! Wooo Hooo!!! I will be giving away one of her adorable bags this fall, but check out her website! The bags are awesome quality and I love the fabric choices and how you can personalize them!

The Best Bag ever!!! The organizing utility tote has 7 outside pockets!! I got one to keep in my mini van to hold all my “Stuff” in the well between the front two seats and it was only 25.00!!!!

I was so excited when I was able to try some delicious wine and champagne from Barefoot Wine and Bubbly!! They sent me their Sweet Red and their Brut Cuv’ee Champagne. I also picked up a bottle of their Moscato for the home party that I hosted on Friday night!


The first wine we tried was the Sweet Red.

Grilled veggies. Marinated steaks. Gather up the family and friends for a BBQ.

I made a sangria with it. I added  tons of fruit. Chopped apples, mango, pineapple, green grapes, and orange slices. All you have to do is pour the bottle of wine in a large pitcher, add one can of diet sprite or ginger ale and all your fruit. Let it marinate for 1 hour. It was amazing and you can eat the fruit with a fork.


I also bought a big bottle of the Moscato at my local liquor store. My friends loved it and they drained the bottle in no time! It was light, fresh and delicious!!

Delightfully sweet with lush fruity aromas. Hints of citrus skip across flavors of juicy peach and ripe apricots. A bright, crisp finish dances in at the end. It’s a bit sweeter than our Riesling.

We have not tried the champagne yet, but my husband and I plan to pop it open as soon as the air gets a chill in it, so we can enjoy it by the fire.

Now the best part at home parties besides the drinking and shopping is the food! I made tons of naughty favorites, but also made my delicious Roasted Eggplant Dip and a ww friendly artichoke cups. My friend Julie shared this recipe with me and I know you will love them. They are like eating artichoke dip in a wanton wrapper. Easy, low in points and everyone wanted the recipe!

Hi everyone and happy Friday! I am enjoying some beautiful CT weather and counting down the days until school starts. I baked my yogurt lemon muffins for breakfast and added some fresh blueberries. They were awesome and I doubled the recipe and froze ½ of the muffins for school snacks. So I have been eyeing these taco cupcakes over at Emily Bites  blog and I thought maybe I would mix the recipe up a bit and add some different ingredients. I love the southwestern egg rolls  like the ones you can find at Cheesecake Factory and California Pizza Kitchen. They are usually wanton wrappers filled with chicken, beans, avocado etc.!! I did  have some wanton wrappers, but next time  I will use  my favorite low carb Trader Joe’s tortillas!

Roasted Eggplant Dip!

Hi all, Did you miss me??? I have been incredibly busy the last few weeks and have not had time to cook or post. But, I am back with some delicious recipes for you!!! I have 3 new recipes to share with you this week! Taco Cupcakes (complements of Emilybites), Freezer Pancake and waffle Mix and Roasted Eggplant dip!

One of my neighbors is a fabulous cook! She makes bruschetta and stuffed mushrooms to die for! The last time I was at her house she was telling me all about her new weight loss plan. She has cut all white flour, sugar and most meats out of her diet. She has lost a lot of weight and looks great! One of the recipes she served was Roasted Eggplant Dip and it was AMAZING!!! I inhaled half the dip in about 2 seconds (I hadn’t eaten most of the day, I know bad Shannon) and I demanded the recipe! I made it for guests we had this weekend and they loved it. I know you will too! I will be posting my newest giveaway tomorrow morning…..

My low fat Layered Mexican Dip!

I love dip. Dip with chips, dip with crackers and dip with veggies. One of my favorite is a Mexican layer dip. I created this one for a family picnic a few years ago and it was a huge hit!!! Everyone will devour it and have no idea it is good for them! Enjoy!

Chicken “Margherita” Quesadillas – 7 pts +

Quesadillas are an easy and delicious, quick meal. I like to fill my tortillas with a variety of fillings. Some of the savory ones I make are made with the same ingredients as my favorite foods; Rubens with sauerkraut and corned beef, grilled veggies and cheese,and pepperoni, mozzarella and pizza sauce. You can also make them sweet with nutella or peanut butter with bananas and strawberries or apples and cinnamon. One of my favorite pizzas is the Margherita. It has fresh buffalo mozzarella, basil and tomato. The colors green, white and red are symbolic of the Italian flag.

Here is my spin on the traditional quesadilla; Instead of using fresh mozzerella, I used chevre (soft goat cheese). I also always have a big bag of precooked chicken strips from Tyson and I threw some of those in as well. The cheese melted beautifully and the tortilla was crisp. It was a perfect lunch! Enjoy!!

Summer BBQs and Creamy Tomato and Pepper Dip (1 points +)

Happy Saturday everyone! Today we are going over to a neighbors house for appetizers and drinks and I need to bring something yummy and low in points. As the weather warms up there are more fun picnic and BBQs to go to and there is also a lot of temptations that can ruin your healthy eating. My plan is to always bring something that I really like whether that be a dessert, side or appetizer, that is low in points. I remember going to a summer party a few years ago and I brought my easy tabbouleh salad as a side and a fruit salad. I knew it would be a better choice than coleslaw or potato salad. I filled my WHOLE plate with a lot of fruit, a cup of tabbouleh and a hot dog. I sat next to a woman who had some celery and carrot sticks on her plate. I asked her why she wasn’t eating and she said she was on a diet. Now as well all know being on a “Diet” is a bad idea, it is not something you will stick to and you will feel deprived. I guarantee she went home and pigged out! Who wouldn’t? She must have been starving! I like weight watchers because you can eat REAL food and not feel like you are dieting. That is why it works long term and eating carrot sticks is no way to live! Here is an easy dip recipe to bring to your next get together or it is awesome spread on a sandwich! It is 1 point + so you can use veggies for a guilt free snack or dip in pita chips or tortilla chips! Enjoy!!

Garlicky Spinach Cheese Squares (4 points +)

I have a lot of dip recipes, but I am always on the search for a new appetizer that is a little different and still delicious.  Frozen spinach is very easy to store and the rest of the ingredients are always in the pantry, so it is an easy last minute snack. It has lots of iron and yummy cheese! Everyone loves them!  They are 4 points + for a small square or you can cut them into large squares and eat it as a meal with a large salad! Enjoy!!
