New Smart Ones Satisfying Selections Meals!

One of the awesome perks of being a food blogger is trying new foods. I am a member of, an amazing social network, and they asked me if I wanted to try out the new Weight Watchers Smart Ones Satisfying Selections Meals. Since I am a Weight Watchers girl, I was thrilled for the opportunity. When I was working outside of my home I almost always brought a Smart Ones meal to work with me everyday. I liked the choices they offer, but I was always still hungry after I had scrapped the dish clean. When I got two of the new Satisfying Selections to try, I honestly wasn’t expecting anything different than the average frozen entree. I was VERY surprised by how good these were! Not only do they have 30% more food in the package, it also has a lot more protein. Instead of just microwaving the meal in a plastic dish, you can actually steam it in the microwave in the bag or cook it in a skillet. Here are the two types I tried:

Sesame Chicken- this actually tasted just like something you would get from your local Chinese takeout restaurant and the portion was really big!

I love the big chunks of breaded chicken and the sauce was slightly spicy!

I also tried the Chicken and Broccoli Alfredo! Huge portion again, delicious creamy sauce and big pieces of grilled chicken. I love the corkscrew pasta!

These meals honestly tasted just like something you would make from scratch. I am definitely going to buy them again.

Roasted Butternut Squash Goat Cheese Ravioli with a Caramelized Onion, Bacon, Brown Butter Sauce

So, I have been experimenting with Butternut squash lately and I have decided that I love it. When you roast it with a little olive oil, salt and pepper, the flavor is amazing. It gets all caramelized and the balance between salty and sweet is just heavenly. A few years ago I got a pasta maker for Christmas and decided I would only make and eat homemade pasta. I found a recipe in the Food Network magazine for homemade ravioli. The process was long, messy and my kitchen looked like a bomb had dropped. The end result however, was totally worth it. Homemade pasta has a amazing texture, slightly chewy and my husband and I decided it was one of the best meals we have ever eaten. My pasta maker is now in the back of my cabinet waiting for the day I have enough time to take it out again, however I have found a new trick to making homemade ravioli that is easy and very quick. Wanton wrappers can be found in the produce section of your grocery store and they are the perfect size to make your own homemade raviolis. You don’t have to worry about making the dough, rolling it out, cutting it etc. It is all done for you! This recipe was delicious and quick, you can customize your own fillings as well. The possibilities are endless! Enjoy!

Hello everyone! I just got back from a fun week at my parents house. The kids finished school on Monday and we were on our way up to Grandma and Grandpa’s house. We had a great time, swimming in the lake, eating out and I enjoyed sleeping in! (Thanks Mom!!!) So now that school is officially out, I have more time to cook and create in my kitchen. Yeah!


This week, I have also been officially blogging for 6 months!!! Wow time flies. Thanks to everyone that has joined me on my cooking journey! I have not only learned how to make tons of new and delicious recipes. I have given birth to a beautiful and healthy baby girl and then lost majority of my baby weight following ww! (41 lbs)

I have learned to finally enjoy exercising, by joining a Zumba class and I have even started jogging!!! (If you knew me, this would truly shock you) I have also discovered and learned about many new and exciting food companies, that have allowed me and all of you to taste their delicious foods. Thank you to everyone for reading and commenting on my posts :)


I went strawberry picking again and knew I wanted to do something with them that would allow me to enjoy them for more than one meal, but what could I make???

I loved my fresh strawberry ice cream so much, that I decided to make some jam.  Now I have never made jam before. I have always been worried about “canning” and I never have pectin in the house, so I decided to create a decadent and different jam using some of my favorites, agave and lemon. The result was AMAZING! It was fresh, sweet and tart at the same time and the agave was a perfect substitute for regular granulated sugar. You can substitute any other fresh or frozen fruit as well. Happy Summer everyone!

Organic Gardens and Easy No Knead Bread

Good morning everyone. It is a bright, beautiful day here in sunny Connecticut. We had a wonderful weekend of cookouts and gardening. My goal for this summer is to try and grow all our veggies and some of our fruit. My daughter and I went to our local organic nursery Jessica’s Garden and got all the essentials for our garden. (they also have awesome lobsters rolls and fresh ice cream! My favorites are goat tracks and dirty barn shoes (both chocolate with different mix ins) Gotta love rural CT!) I got a bunch of organic top soil and my favorite veggies. I like the fact that I can go out into my garden right before dinner and get fresh lettuce, cucumbers and tomatoes, still hot from the sun and the flavors just burst in your mouth!

So here is what we got!

4 kinds of tomatoes!

2 types of Cherry tomatoes and 2 regular sized tomatoes



1 green pepper, one red pepper and 1 banana pepper

3 types of lettuce, strawberries, basil, cilantro and mint!



4 cucumbers, 1 zucchini and 1 yellow squash



2 blueberry bushes!


I got very inspired from a book I recently picked up called Wildly Affordable Organic by Linda Watson. She has amazing ideas on how to save money and very simple recipes. Last night I made her No Knead “Wisk” bread and baked it this morning! It was so amazing. Check out the recipe here. I will be giving away one of her books in July, it will change your outlook on how to eat organic on a budget!

Chicken “Margherita” Quesadillas – 7 pts +

Quesadillas are an easy and delicious, quick meal. I like to fill my tortillas with a variety of fillings. Some of the savory ones I make are made with the same ingredients as my favorite foods; Rubens with sauerkraut and corned beef, grilled veggies and cheese,and pepperoni, mozzarella and pizza sauce. You can also make them sweet with nutella or peanut butter with bananas and strawberries or apples and cinnamon. One of my favorite pizzas is the Margherita. It has fresh buffalo mozzarella, basil and tomato. The colors green, white and red are symbolic of the Italian flag.

Here is my spin on the traditional quesadilla; Instead of using fresh mozzerella, I used chevre (soft goat cheese). I also always have a big bag of precooked chicken strips from Tyson and I threw some of those in as well. The cheese melted beautifully and the tortilla was crisp. It was a perfect lunch! Enjoy!!

So why is their meat a better choice to feed your family???

Organic Sunday Bacon

At Applegate, we know that no food is as tempting as good old-fashioned country bacon. That’s what led us to create our famous Sunday Bacon in the first place. We’ve taken the same classic recipe, which the New York Times hails as “Superb…” and have brought Sunday Bacon to a whole new level of health and sustainability. Winner of 2011 Health Magazine!!!

This was really good! It was lower in fat, so it didn’t shrink into nothing when we cooked it, but it had that same delicious, bacony goodness!!!! BLTs anyone????  2 slices for 2 points +

I noticed that they do not add nitrates and I asked them why?  Here is their answer :
All animal proteins are made up of amino acids that contain naturally occurring nitrites.  Therefore, all food made with animal protein will have trace levels of naturally occurring nitrites.  In addition, the celery juice and sea salt used to cure our meats also contain naturally occurring nitrates.  For these reasons, the USDA does not allow animal protein products to state “nitrate/nitrite free” on their labels.  Packages for such products are required to say “no added nitrites” since they do contain the naturally occurring variety, but they were cured without the addition of sodium nitrate.

The term “uncured” means that a product has been cured without the use of sodium nitrite.  Instead, the product is naturally cured using a combination of celery juice and sea salt.  A cured product is fully cooked and ready to eat from the package.

We agree that the term “uncured” is confusing.  However, the USDA requires the word to be printed on the label of any product that is naturally cured.

Easy and delicious snacks!!!

I was at a friend’s house today for a play date and a work out session with the Jillian Michael’s DVD and we started talking about snacks. She said she finds it difficult to snack during the day and then is ravenous by dinner time. Snacking is important! It keeps your metabolism up, it makes us less likely to stuff ourselves at meals and I love to eat, so the more food the better. I think that many of us need a quick snack that satisfies us! So eat something that  you are craving!  ! You need at least 2 a day!! So pick some you like! Here are some of my favorite snack ideas for all us busy woman out there….

This is delicious. I saw this posted on one of my favorite blogs Danicasdaily as her “dessert” after lunch everyday. I bought the ingredients and love it!!!

“Lemon Meringue Pie” Parfait (4 points +)

  • 1/2 cup of plain or vanilla flavored greek yogurt
  • 2 vanilla wafers crumbled
  • 1 teaspoon of jarred lemon curd

We were invited over to a friend’s house for dinner this week and she said I could bring dessert! I suggested cheesecake, but she said her husband wasn’t a big fan. So I said how about if I put chocolate and peanut butter in it? She said “He will love it!” So I decided to create a decedent, reduced fat version of my favorite cheesecake, Adam’s Peanut Butter Cup Fudge Ripple at the Cheesecake Factory.  One slice of their cheese cake has: Calories 930 , Total Fat 59g,  Total Carbohydrate 93g , Dietary Fiber 4g , Protein 17g on piece is 27 POINTS +!!!! Scary!!!! My version is just as delicious and will satisfy your every chocolate, peanut buttery desire. I used fat free Greek yogurt instead of sour cream and it made the filling very velvety and creamy!!! Enjoy!!!

Apple Pie Cookies – 2 points +

There is nothing like warm apple pie….that is until I made these cookies!!! Is it bad that I ate 3 warm from the oven with a glass of milk? These are my new spin on the banana bread cookies that I made before. I made the recipe healthier by substituting oats for flour, applesauce for some of the butter and maple syrup instead of all sugar. The chunks of apple, cinnamon, ginger and nutmeg give this cookie the same satisfying taste of warm, apple pie. It’s like the filling and crust are all in one! They are only 2 points + each and they are a good size! Crumble up a warm cookie in a bowl and top with vanilla ice cream!! Now that is a little bit of heaven!!!
