Where have you been? I bet you are all wondering that. Well, crazy busy is the answer. Along with my own three kid’s crazy schedule, I also started teaching preschool full time. Unfortunately, majority of our meals have been take out, fast food or cereal. So I have not been able to get my creative juices flowing in the kitchen. But, alas it is summer, therefore I do have more time than usual. So although I would like to post regularly, my goal is to try to do it as much as I can this summer. I have gone back and forth on my eating since I started this blog. I get on “kicks”, which goes along with my ADHD. One minute I am all about weight watchers, then it’s flat belly, then it’s paleo and crossfit, then a cleanse, and now I am trying out the gluten free approach to eating. My mom said “just eat smaller portions, weight watchers works for you.” I agree it does work, when I actually stick with it. My problem is I like to eat! I like dessert, I like BIG portions, I like to be super creative in the kitchen. So hence, my blog is a little nutty and all over the place, but if you know me I tend to jump from one thing to another in all aspects of my life as well. So currently, I am ten lbs above my goal weight and 20 from my pre baby, dream weight (doubt that will ever happen), I am trying to get to Zumba and I am trying to make good choices and cook more at home. (and not stop for free slushies at cumberland farms:) )

I also tried a Stomach wrap to help tighten my saggy mommy tummy. I was very skeptical, but I have been stalking one of my friend’s facebook posts and the  before and after pictures, so I messaged her. She told me that the wraps were all natural and plant based and that the plant enzymes helped your fat cells release toxins and tighten your skin. So I went last Wednesday and she took before pictures and “wrapped me”.  Hey it sounded like it was worth a shot, so….. here are my before and afters….

She only wrapped me once and had me drink lots of water, avoid caffeine, alcohol and processed foods and then I had to take after pictures (my 7 year old actually took them) and take measurements.

Across belly button lost 2 inches

Under belly button lost 1 1/4 inches

On to the recipe! This was so yummy and easy, you can easily make the egg “cupcakes” and eat them alone too!

Crossfit/Paleo and Pumpkin Bread

When living in a small rural community, any new businesses are the talk of the town. The newest subject of mommy gossip is the brand new “Cross Fit” gym that opened in town. Now I knew it was intense and I knew that you had to do weight lifting. I am a Zumba girl, so I didn’t think I would like the whole idea. BUT, a few years ago there was a mom at gymnastics class. She stood there with a fat baby on her hip and two little girls standing by her side. She had one of the best bodies I have ever seen. She was lean, super toned and still feminine. So I asked her, what she did to look so awesome. She replied Crossfit and Paleo. I had never heard of either. I just dismissed it and went on my mary way and figured I will never look like that. So when I saw one of my favorite bloggers Jen at It Sux to be Fat and her posts about Paleo and crossfit. Like me, she has tried a variety of different approaches to weight loss. So when I heard about the new Crossfit in town I figured I would check it out! I am starting tomorrow morning. So I will have to let you know!!!

However, I did start Paleo on Monday. So I am on day 5 and I can proudly say, I am not hungry, have no cravings and am truly enjoying my food. You must be asking “what the heck is Paleo??” Basically it is eating the food our body is meant to eat. Meat, fish, veggies, fruit, nuts, eggs and lots of fat (grass fed butter, olive oil, coconut oil, coconut milk, avocados etc)I am actually going to a nutritional presentation on Wed. so I can let you know more details.  Did you know that 90% of your weight loss is your diet. My fav quote is “abs are made in the kitchen”. You can exercise like a nut, but you won’t lose that body fat if you don’t eat well. So since I’m a baker, my big question was what flours and sweeteners can I use?? The answer is Almond flour, coconut flour, tapioca flour, arrowroot powder for flour and pure maple syrup, coconut sugar, and honey for sweeteners.

So I decided to post some of my paleo recipes for you. I will not be posting the nutritional facts/ww points. This program is not based on calories. You eat when hungry, that is it. I have been eating 6-8 times a day and I love it!! Basically avoid breads, crackers, cookies, beans, peanuts, popcorn, sugar….eat only things that are found in the perimeter of the grocery store.


Paleo Pumpkin Bread

(yeah my kids ate the whole loaf in 1/2 hr, guess it was good!)


 Serves 4-6

  • 1 cup almond flour
  • ¼ teaspoon pink sea salt
  • ½ teaspoon baking soda
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • ½ teaspoon cloves
  • 1/4 teaspoon ground ginger
  • ½ cup pure canned pumpkin
  • 3 tablespoons honey or pure maple syrup
  • 3 large eggs
  1. In a small bowl combine almond flour, salt, baking soda and spices.
  2. Add pumpkin, honey, and eggs and mix well
  3. Put batter into a small loaf pan.
  4. Bake at 350° for 35-45 minutes
  5. Cool for 1 hour
  6. Serve with grass fed butter!

Avocado Banana Mousse

People may wonder why I would ever attempt to add avocado to chocolate mousse. I mean isn’t avocado good in guacamole or spread on fresh baked ciabatta bread? Not in a sweet dish, gross, who would eat that? Well I decided I would give it a try. Everywhere you look on the internet under avocado mousse you will see vegans raving about this delicious concoction. My theory was well when you don’t eat cream or egg yolks, I guess that an avocado smashed with some cocoa powder must taste like you “think” a mousse should taste. I was skeptical, but decided to give it a try. Since I am doing ww points, I knew that using only avocado as my base would make the points super high, so I added a banana to it. I would recommend using a high quality cocoa powder like Ghiradellis, it will make a  huge difference in the flavor. So I got out my Cuisinart and added all the ingredients….it looked strange.

After I blended it, it did resemble a thick, chocolately mousse and when I tasted it, it did taste like a thick chocolate pudding. It is not as light and fluffy as a traditional mousse. But hey, it is made with fruit and vegetables, so I’m not complaining. I chilled it, stuck a piece of banana in it and topped it with some slivered almonds. It was really good! I even licked out the glass with my finger! Try it! 

Chocolate Banana Mousse

Serves 4

  • 1 ripe hass avocado
  • 1 ripe banana
  • 1/2 cup cocoa powder
  • 1/2 cup honey, agave or maple syrup (pure)
  • 1/4 tsp salt
  • 2 1/2 tsp vanilla
  1. Put all ingredients in a cuisinart or use a hand blender. Blend until smooth.
  2. Place mousse in 4 containers, glasses etc.
  3. Chill for 1/2 hr

6 points + per serving!

Butternut Squash and Sausage Enchiladas

Sorry I haven’t posted in a while. With 3 kiddos and all their activities and homework, I have been swamped. I have had a butternut squash sitting on my counter for a few weeks and wasn’t sure what to do with it. We were very excited to plant butternut squash in my garden, but our enormous vine only produced ONE sqaush. I am not sure why, but we were a little disappointed. I love butternut squash. It is delicious roasted and I have thoroughly enjoyed it in a few of my favorite fall recipes. Saffron Butternut Squash Parmesan Risotto and Butternut Squash Goat Cheese Ravioli. So I though a mexican dish would be delish. I looked around the web and found a Vegan recipe for Black Bean and Butternut Squash Burritos on Oh She Glows.  I decided to change the recipe up and make it an enchilada dish and add some sausage. It was so good and my son said it was his favorite dinner ever! Wow!

Black Bean,  Butternut Squash and Sausage Enchiladas

Yield: 4 big enchiladas

8 servings:


  • 1 medium butternut squash, peeled, cubed, & roasted
  • 6 chicken sausage links, precooked and cut
  • 1-2 tsp olive oil
  • 1 tsp kosher salt, or to taste
  • 1 tsp pepper
  • 2 tsp ground taco seasoning or to taste
  • One 15-oz can black beans (about 1.5-2 cups cooked), drained and rinsed
  • 3/4 cup cheddar cheese
  • 4 large light tortilla wraps
  • 1 can green enchilada sauce
  • Toppings of choice: (avocado, salsa, sour cream, etc)


1. Preheat oven to 425F and spray cookie sheet with pam. Drizzle olive oil on squash and give a shake of salt and pepper. Coat with hands. Roast chopped butternut squash for 45 mins. or until tender.

2. Cook chicken sausage and then cut into bite size pieces.

3. In a large skillet over medium-low heat, add beans, sausage and squash. Sautee for about 5 minutes, stirring frequently. Now add in salt and seasonings and stir well.

4. Add 1/2 cup cheese and heat another couple minutes.

6. Pour 1/4 cup of enchilada sauce in bottom of 9 x 13 dish. Add  filling to tortillas, roll and place in pan. Top with remaining sauce and cheese. Bake for 25 minutes at 375 degrees.
